Yapincak is an indigenous grape variety that comes from the region of Thrace. The grapes are pressed as whole clusters and fermented in the stainless steel tank at 18°C for 21 days in stainless steel tank. Part of the wine is fermented in French oak barrels at 18ºC-19ºC. This part is barrel aged for three months after vinification.
The rest is kept in the stainless steel tank on its fine lees for 3 months and stirred once a week to add complexity to the wine.
light golden color; on the nose citrus lemon and milk cream with some linden nuts. The medium acidity and pronounced minerality follows with a long finish.

Yapincak has been saved from extinction by dedicated winemakers, and Pasaeli is the first producer in Turkey to produce a 100% Yapincak wine with its 2010 vintage.
