The grapes were destemmed and after gentle crushing, maceration took place for 15 hours on the skin to extract color and flavors. Then they were pressed and fermented in stainless steel tank. Processed as low intervention, the wine was bottled while fermenting with no fining and filtration. The alcoholic fermentation was finished in the bottle, and CO2 was trapped as bubbles, making it naturally sparkling. It remained in contact with the lees for 7 months, then it was manually disgorged.’.
Bright, deep candy pink in color; very fragrant with strawberries, red cherries, and raspberries on the nose. Great fruit intensity is balanced by high acidity and delicious sour-cherry aftertaste with well-formed bubbles.
