The grapes were pressed and fermented in stainless steel tank. Processed as low intervention, the wine was bottled while fermenting with no fining and filtration. The alcoholic fermentation was finished in the bottle, and CO2 was trapped as bubbles, making it naturally sparkling. It remained in contact with the lees for 7 months, then it was manually disgorged. Pet-Nat is the short name for the French pétillant natural, simply meaning ‘naturally sparkling’.
Apricot blush in color; very fragrant with strawberries, currants, and pomegranate. Bright acidity, flavors of tangerine and orange blossom persist into a long, joyful, and crisp finish with well-formed bubbles.
